What's for Supper?

After a stressful day, cooking seemed very relaxing- which believe me- is not how I usually feel about spending time in the kitchen. I made a delicious Apple Cake from the Pioneer cookbook, but before dessert, we had salad with chicken for dinner. The Apple Cake smushed into the bundt pan

Apple Cake:
3 c. flour 1 t. baking powder
2 c. sugar 2 eggs
1 t. baking soda 3/4 c. crisco oil
1/2 t. salt 1 t. vanilla
1 t. cinnamon 4 c. chopped apples

Preheat oven to 325 degrees. Measure all ingredients into mixing bowl. Mix with wooden spoon until well-blended -I actually found it is easier to mix with your hands because it is thick and lumpy. Pour- it is actually more like scoop- into greased bundt/angel cake pan. Bake one hour or until knife comes out clean. Let cool in pan before removing.
Optional Glaze:
Mix 1/2 c. butter, 1/2 t. salt, 2 T. evap. milk, and 1 c. brown sugar. Bring to a boil and pour over cake.
